Random Tuesday thoughts

Agh! I don’t have any blog posts planned out for the week, so I’m sitting down here this morning going to tell you all about my week and last night.

I bought a bunch of stuff at Ikea last week when my boyf was in the states for a few races. I had to retrieve him the other night 50 minutes away and get on three highways in total. I’m telling ya, I’m becoming the real slick driver here in Ontario. I guess the GPS had something to do with it too. Coming up in July I have to renew my license, and get a new picture taken. Also probably shop around at the same time for auto insurance quotes burlington nc.

11-bucks-groceriesOut of the $10.89 I spent on  groceries last night. Maple leaf coupons totally had something to do with it ;)

Last night he put one of the two items together, a bookcase for myself in the bedroom. I had planned on using it for just shoes, but it’s sort of smaller than I anticipated. It’s tall, with 8 cubbies, but not sure if all my shoes will fit. We also had a debate as to whether or not it should stand up straight (his idea) or lay horizontally to make it look much “cooler” (I always have the cool ideas). We finally decided on having it vertical just because it won’t use up so much floor space.

I’m counting down the sleeps until I head home to Newfoundland. It’s just me going home on this trip, so I’ve been planning out meals for the Boyf while I’m away. Cooking in advance and all that sweet girlfriend stuff.

I’m wearing a maxi dress today. Want to see? Not sure what I think about it, but I’m wearin it!

I stayed home from work yesterday as I was feeling under the weather. But today so far has been so very productive. Sweet moses is all I can say.

Each Friday I sit at my computer and put up the outfit’s of the work week. But I’m a multitasker when I do that. Got my breakfast ready and waiting to eat while I edit.

jujube-cake jujube-cake2Oh, and I also made jujube cake (really like a bread consistency) while I was at it. I know. I’m going to bring some to work with me shortly.

Egg ‘muffin’ omelets (Paleo friendly)

I’ve received a few comments from people who wanted to know how I’ve been making my egg omelet muffins. It saves me time and most importantly energy I don’t have in the morning. I make a batch of 12 on Sunday morning and I have enough to due us all week.

Preheat your oven to 350°. Spray your muffin tins with cooking spray so they don’t stick.canola-oil

Get 12 eggs ready.12-eggs

Crack and beat them into a cup where you can pour properly. Here is where you can add milk, but since these are ‘paleo friendly’ I did not. stir-the-egg

Pour the egg mixture evenly into each muffin cup.eggs-in-cups

Get your veg ready! I’m adding yellow bell peppers and fresh mushrooms.veg

Make sure they’re chopped up into bite size pieces. mushrooms

In goes the peppers! Add as many/as little as you’d like.pepper

Pop them into the oven for 55 minutes and this is what you’ve got:eggs-out-of-oven

Let them cool off for a bit and store them in an air tight container and you’re set for the week!eggs-cooling

INGREDIENTS

12 eggs
veggies of your choice
spices of your choice

DIRECTIONS
  1. Crack 12 eggs into a container and mix until beaten
  2. Pour egg mixture into 12 muffin cups (sprayed with cooking oil so they don’t stick)
  3. Drop in your favorite veggies (bite size pieces)
  4. Cook for 45-55 min at 350
  5. Serve, and enjoy!
