Homesick for Ireland

Sigh. These photos are about 6mths old. My brother fails at keeping me in touch with my nephews lol. (Kelan on the left. Ruairi on the right & middle). <3

My brother didn’t make it out to the oil rigs in Newfoundland until yesterday afternoon. Boy they’ve got it good (they get fed like Kings on the rigs. I mean, they’ve got it bad too…I could never take a job on an oil rig). Someone didn’t end up booking him on the (18hr) boat, so he had to wait for an extra 3 days on dry land. Not bad in my books — they get paid while they stay at home waiting for a call! I’m sure his boys are missing him terribly. Three weeks seems like an eternity in child’s eyes, doesn’t it? Poor Kelan told his mother “You go collect my Daddy, right now!” I love the dialect of the little Irish guy. “Collect” my daddy.

So what’s the deal with the youngest boy? Ruairi turned one just a few days before Christmas, and he’s not walking yet. I think it’s because he just knows how good he’s got it. My brother told me that he can walk, he just chooses not to. Everything is brought to him by the other three brothers. Smart kid.

I sure do miss those kids, though!

Weekend menu’s

It’s been a while since I last posted a weekly menu. Since I rarely cook anything interesting for myself during the week nights — I have decided to post weekend only menu’s, as I spend weekends at boyfriends place. Also, this is just so I don’t do duplicate meals every single week. It may seem a bit anal planning this far ahead, but it gives me a bit of inspiration to look for new recipes, and if they’re tasty enough I just very well may post them in my recipe section!

APRIL 3–5
Friday: Home made tacos, with lean ground turkey meat (because I don’t like beef all that much), topped with chopped tomatoes, shredded lettuce and low fat shredded cheese.
Saturday: Chicken wraps or chicken quesadillas (recipe)
Sunday:
Pork chops with roasted potatoes and veggies

APRIL 10–12
Friday: Chicken Pad Thai with Bell Peppers (recipe)
Saturday: Asparagus wrapped in Chicken, served with mashed potatoes and veggies
Sunday: Thai chicken with bell peppers and cashews (recipe)

APRIL 17–19
Friday: Parmesan garlic potatoes with pork chops and carrots
Saturday: Salmon with basmati rice and greens
Sunday: Macaroni and Cheese

Mmm can’t wait for supper tonight! Can you believe that my boyfriend has never had taco’s before I made them for us a few weekends ago? He obviously found them quite delicious as he request that I make it for us tonight. What’re you guys having?

The smallest things, make me giddy

Holy hannah, the world cannot get any smaller can it? Us Newfies are everywhere!

I work at a small two branch Credit Union (as a Graphic Designer & Marketing Assistant) that has about 40 employees, none of which are in my age category unfortunately. Back on topic. Naturally small Credit Unions do not have in house solutions to compliance and fraud detection, so of course they out source. The Finance Dept. Manager came over to my office this afternoon and presented a printed envelope with a name/company and address.  She jokingly pointed out Newfoundland Dr. on the envelope and said “As if they couldn’t think of a better name for this huh?

(The next part really points out my ditzy personality.)

I smiled and said  “Oooh that’s neat. We actually have a Newfoundland Drive back home too!” Then my eyes wandered up at the company and I clued in that I’ve heard that company name before. I was thinking and thought that hmm, bet this isn’t in Ontario! Then my eyes scrolled down to the city and province. DUH — It was indeed,  St. John’s Newfoundland!  So I got all kiddy and smiley and said to the Finance Manager that “I totally know someone who works at that company!” She asked for his name, and when I told her she didn’t know who he was. We then went to another one of our co–workers who speaks to people regularly, at this company asking if he was a hottie and what not (haha!). I told the story about how he’s an Engineer and my BFF is one, and used to go to Engineering parties all the time when I was in school. It’s sort of how I met my boyfriend. I was friends with his best friend  (the guy who works at this company) for a while, and then met my boyfriend through him!

Needless to say I was pretty excited that we did business with this company. The the envelope addressed to the Administrative Assistant, (I have no idea how big this company is but I’m assuming it’s not absolutely ginourmous because I know what the outside of it looks like) so I wrote a little “hello” note to my friend! Hopefully the admin. assistant knows my buddy and will pass my “hello, from nancy ***!” note on to him.
