Imitation tacos

My boyfriend doesn’t like taco seasoning, and I crave taco’s once in a while. I love the crunchy crispy shells and love the seasoning. For the longest time — I’m talking a year or more, I haven’t made them.

Then, it hit me.

I don’t have to make real tacos! I can make my very own version! So, I did.  Last week was an experiment but it turned out so well that I had to write this blog entry to remind myself how tasty it was, and that it needs its own page on my recipe section.

I was debating at the grocery store, whether or not to get lean ground beef or lean ground chicken. I’m not a huge beef eater and only like them in hamburgers, but then that’s rare that I eat burgers. Whatever. I ended up picking up a lean ground sirloin beef. Whoops—apparently that’s much more pricier than regular ground beef. I picked up what looked the most lean. Know what I mean? Ha.

I fried it up in the frying pan and added some Italian seasoning, chicken seasoning, and some other kind of  beef seasoning. Basically, I had no idea how to season the beef so I added everything I could find that I knew tasted good with chicken—even though I wasn’t cooking chicken.

I cooked it up, and then once it was all browned, I put it on a paper towel and dried off all the grease. While it was cooling off on the plate, I put 1tbsp of cream cheese and 2-3tbsp of salsa. I know, weird mix right? Then as it was sizzling on the pan, I put the beef back in with it so it got all coated. Added some chopped peppers and tomatoes and called it done.

On an empty plate I put a bed off fresh crunchy iceberg lettuce then topped it with the meat mixture, added some shredded mozza and some fancy mexican chips!

The chips I used I think I found in the Asian aisle of the grocery store, even though it clearly says Mexican chips. So good, and not salty at all! Perfect mix for the imitation tacos!

I love these corn chips. They’re not all that flavorful on their own (think, not too salty, a little grainy) but with some ground meat it’s best kind. Plus you don’t need Nikon binoculars to read the ingredients on the back. Key.

I think you should re-create it. You too Mom, I think the little boys (my nephews) would love making their own (mess).

OOTWW & WOTD

What does all that jibber jabber mean up in that title?

OOTWW = Outfit of the work week
WOTD = Workout outfit of the day

That’s what I’m going to post each Friday now as I start to work out more often. Hope you don’t mind the sweaty mess of my workout outfits. I’m not fit to have a photo take of me before I work out because I literally get so nervous that I get ill. It happens to me before soccer games, before I go out on a run with or without people, or before I workout. I don’t know why. I even had to tweet to calm myself down.

Whatever, it half-worked. Ok so, here are my outfits. I feel a little silly posting my workout outfits, mainly because I look like crap after workout out.

Monday was a holiday here, so that’s why there’s only four photos for the above OOTWW.

I got spoiled!

When Cinda B bags wrote me and told me they were sending me something to review, I didn’t realize the something was actually plural: some things. Oh boy, did they ever spoil me! I raced to the post office to pick up my package and rushed home to open it. Inside was a handwritten note which I thought was so sweet. Hi Brittney!

The only thing I mentioned while dealing with Cinda B was that I was interested in the lunch tote, and I picked out a handful of colors that I enjoyed. The color the girls picked out for me is called “Bella Fiore Raspberry“. Apparently that color matches Pantone’s color of the year. As a Graphic Designer, I already feel ashamed that I didn’t know that.

Okay let’s get to it! I wanted to show you the things they gave to me!

First of all, a close up shot of their adorable logo and soft material that everything is made out of. Easy to clean too. Bonus.


Lunch tote can be buttoned up to carry as a “clutch” style, or as a handle.

The lunch tote has a nice sized bottom to it (7″w x 6½”D x 8″h). You can sort of see the size of it here, as a side view.

I’ll be using this as my everyday lunch bag for sure! Which one is Nancy’s lunch? Ohhh the cute pink bag in the fridge!!

Here’s my new lunch bag next to my old one. It’s massive!!

Clearly the lunch bag was my favorite item. It scored the most photos featured here on my blog, ha!

Alright then I got the Vertical Cosmetic bag which will defintiely come in hand. I can also see myself using this as another lunch tote, but it’s not as wide on the bottom.

It has so many pockets!

Yoga bag! I totally need to go to another yoga class and get my own mat, just so I can carry this cutie patootie in with me.

Inside, the pattern on the Bella Fiore Raspberry is really nice. Notice it has a zippered pocket too, for your keys or something!

This flatiron case is great and very much needed in my household. I always put the straightener on the tiled floor once I’m done with it in the morning, and it just doesn’t look pretty all piled up next to everyone’s shoes. Now it can go in the bedroom all wrapped up nice and pretty until the next time I use it! It’s good because it allows you to put a hot curling iron, or flat iron in its case even if it’s still hot!
