INGREDIENTS
2 Chicken breasts (boneless/skinless)
6 stalks of asparagus
Salsa (any type of your choice)
Cheese (again, any kind you like)
¼ of a tomato, chopped
DIRECTIONS
- Put a pot of water on the boil for the rice, and preheat oven to 325ºF
- Flatten out chicken breasts with a mallet
- Sprinkle cheese and about 1tbsp salsa inside the chicken breast, add 3 stalks of asparagus (Don’t forget to snap off the wooden ends of the asparagus!)
- Roll up the chicken, and secure with toothpicks
- Top with tomatoes, and more cheese/salsa if you wish. Sometimes I add Kraft Tomato & Oregano salad dressing on top, for a little more zest
- Get your basmati rice read for the boiling water. I cook my basmati rice for 11 minutes (still boiling). I measure off ¾ of an average sized mug filled with rice, will serve two people
- Cook chicken in the oven for 30 minutes
- Serve, and enjoy!

Omgosh this sounds delicious! My favourite veggie in the world is asparagus! I can eat it like candy when its been roasted in the oven lol Thanks for the great recipe!
