Asparagus wrapped in chicken

INGREDIENTS

2 Chicken breasts (boneless/skinless)
6 stalks of asparagus
Salsa (any type of your choice)
Cheese (again, any kind you like)
¼ of a tomato, chopped

DIRECTIONS
  1. Put a pot of water on the boil for the rice, and preheat oven to 325ºF
  2. Flatten out chicken breasts with a mallet
  3. Sprinkle cheese and about 1tbsp salsa inside the chicken breast, add 3 stalks of asparagus (Don’t forget to snap off the wooden ends of the asparagus!)
  4. Roll up the chicken, and secure with toothpicks
  5. Top with tomatoes, and more cheese/salsa if you wish. Sometimes I add Kraft Tomato & Oregano salad dressing on top, for a little more zest
  6. Get your basmati rice read for the boiling water. I cook my basmati rice for 11 minutes (still boiling). I measure off ¾ of an average sized mug filled with rice, will serve two people
  7. Cook chicken in the oven for 30 minutes
  8. Serve, and enjoy!
Prep time: 15 minutes | Serves 2 | Cook time: 35 minutes | READY IN 55 MINUTES!
