Italian Sausage Penne

INGREDIENTS

4 Italian sausages
2 tbsp oil
ΒΌ tsp red pepper flakes
3 cloves of garlic
1 small head of broccoli
2 small tomatoes
salt and pepper to taste
1bag of penne pasta
Handful of mozzarella

DIRECTIONS
  1. Put a pot of water on the boil for the penne
  2. Heat the oil, garlic (pressed) and pepper flakes in a pan over low-medium heat.
  3. Remove the casings from the sausages and cut into small sections. Add the sausages to the oil once heated. Cook until brown all the way through.
  4. When the sausages are cooked thoroughly, add the broccoli. Stir-fry until tender, about 5 minutes or so.
  5. Drain the pasta and toss it with the sausage, broccoli and fresh tomatoes. Season with salt and pepper and top with cheese – I used mozzarella which seemed pretty bland. So maybe some other form of cheese would have been a better choice. But I didn’t want to buy a special cheese just for this recipe.
