

INGREDIENTS
2 Chicken Breasts (Boneless/Skinless)
Mozzarella cheese—shredded
Fresh Spinach—chopped
1½ – 2 cups Penne Pasta
Pasta Sauce (preferably something other than just plain tomato)
DIRECTIONS
- Preheat oven to 400ºF
- Flatten chicken breasts, and add seasonings
- Mix spinach and cheese in a bowl with seasonings
- Spoon spinach and cheese mixture onto flatten breasts
- Roll up breasts and secure with toothpicks
- Place chicken in a glass baking dish
- Put uncooked pasta in dish around the breasts, followed by pasta sauce and ½ cup of water (make sure pasta is fully submerged in sauce/water so it will cook)
- Bake for 30 minutes
- Put more mozzarella cheese over the entire dish (optional)
- Bake for an additional 15 minutes or until chicken and pasta are completely cooked
- Serve and enjoy!
