Stuffed Chicken with Spinach


INGREDIENTS

2 Chicken Breasts (Boneless/Skinless)
Mozzarella cheese—shredded
Fresh Spinach—chopped
1½ – 2 cups Penne Pasta
Pasta Sauce (preferably something other than just plain tomato)

DIRECTIONS
  1. Preheat oven to 400ºF
  2. Flatten chicken breasts, and add seasonings
  3. Mix spinach and cheese in a bowl with seasonings
  4. Spoon spinach and cheese mixture onto flatten breasts
  5. Roll up breasts and secure with toothpicks
  6. Place chicken in a glass baking dish
  7. Put uncooked pasta in dish around the breasts, followed by pasta sauce and ½ cup of water (make sure pasta is fully submerged in sauce/water so it will cook)
  8. Bake for 30 minutes
  9. Put more mozzarella cheese over the entire dish (optional)
  10. Bake for an additional 15 minutes or until chicken and pasta are completely cooked
  11. Serve and enjoy!
