Farfalle with Spinach and Pine Nuts

INGREDIENTS

1/3 cup pine nuts
1 large red bell pepper, thinly sliced
4 tablespoons extra-virgin olive oil, divided
2 garlic cloves, minced
½ cup of chopped fresh spinach
Farfalle (bow-tie pasta)
½ tsp dried crushed red pepper (or even cajun seasoning works well!)
1 ½ cup of pasta sauce of your choice
1/3 cup grated Parmesan cheese plus additional for serving
(You can also add chicken to this recipe. Yum!)

DIRECTIONS
  1. Heat sauce pan over medium heat and add pine nuts. Stir until lightly roasted (about 3 minutes)
  2. Add 2 tbsp of oil and garlic
  3. Meanwhile, cook pasta in large pot until tender. Add red pepper flakes, cheese and pasta sauce
  4. Add bell pepper strips to sauce pan, cook until done
  5. Lastly, add your spinach to the sauce pan. Cook until wilted
  6. Mix the sauce pan and pasta together, and serve with more cheese (if you like)! Easy peasy!
