
INGREDIENTS
1/3 cup pine nuts
1 large red bell pepper, thinly sliced
4 tablespoons extra-virgin olive oil, divided
2 garlic cloves, minced
½ cup of chopped fresh spinach
Farfalle (bow-tie pasta)
½ tsp dried crushed red pepper (or even cajun seasoning works well!)
1 ½ cup of pasta sauce of your choice
1/3 cup grated Parmesan cheese plus additional for serving
(You can also add chicken to this recipe. Yum!)
DIRECTIONS
- Heat sauce pan over medium heat and add pine nuts. Stir until lightly roasted (about 3 minutes)
- Add 2 tbsp of oil and garlic
- Meanwhile, cook pasta in large pot until tender. Add red pepper flakes, cheese and pasta sauce
- Add bell pepper strips to sauce pan, cook until done
- Lastly, add your spinach to the sauce pan. Cook until wilted
- Mix the sauce pan and pasta together, and serve with more cheese (if you like)! Easy peasy!
